Remember when I bought an enormous bag of lemons?



Well that same week my mom had charged me with coming up with a recipe for a baby shower that she was hosting, so I immediately thought of lemon bars. Lemon bars had been one of my favorite party treats growing up. They are super sweet and super lemony, but the best part was always the flaky butter crust. Unfortunately, I didn’t quite get them done in time for the baby shower, but aren’t those whales adorable?



For a little twist, I decided to adapt Barefoot Contessa‘s recipe to include strawberries, which turned out to be easier said than done – at least for me. Three batches later (my neighbors love me) I finally had a recipe that I can stand behind, and they are delicious! They’re still sweet, and I didn’t mess with Ina’s perfect crust, but the strawberry flavor is what makes them really special.



Strawberry Lemonade Bars

(slightly adapted from Ina Garten’s Lemon Bar Recipe)


1/2 pound Unsalted Butter, room temperature
1/2 cup granulated sugar
2 cups  flour
1/8 teaspoon salt

1 pint of strawberries
1/2 cup lemon juice
3 cups granulated sugar
Zest of 2 lemons
1 1/2 cup of Flour
6 large Eggs
Red Food Coloring (optional)
Powdered sugar, for dusting

Preheat oven to 350 degrees.

To make the crust combine butter and sugar, and mix until smooth and light. In a separate bowl, combine flour, sugar and salt. Mix in the butter and sugar until just combined, and then press into a 9” x 13” baking dish. Chill for about 5 min, then bake for 15 – 20  min, or until lightly browned. Then remove from oven, and cool.

For the filling, begin by de-stemming the strawberries, and placing them in a food processor. Blend until smooth, then strain into a large bowl (should yield about 1 cup). Whisk in the eggs, sugar, lemon zest, lemon juice, flour, and food coloring (optional). Pour over the cooled crust, and bake for about 30 min, until set. Remove from oven, cool to room temperature, and dust with powdered sugar before serving.

  2. I had three fails last time I tried to make some IPA lemon bars. I couldn’t get the crust and the filling to the consistency I wanted, so I shelved the idea for later. These look great, a lot like what I wanted mine to turn out like.
