Strawberry, Feta, and Pistachio Salad
It’s hot – very hot, and I don’t have air conditioning.
I don’t feel like cooking or even eating much for that matter. Good for my waistline; bad for my hungry husband. It’s the perfect time for tasty salads. I used to think that I didn’t really like salad. Then I realized that you can eat lots of yummy stuff with a little bit of lettuce and call it a salad. True story.
Favorite Summer Salad
Ingredients
Spring Mix Lettuce (Red Lettuce, Baby Arugula and Frissee)
Sliced Strawberries
Crumbled Feta Cheese
Shelled Pistachios
Toss ingredients, and dress with olive oil and balsamic vinegar. Enjoy with a glass of white wine – or two.
